Water is actually very important in the brewing process of Baijiu. Since ancient times, it has been said that Lingquan produces good liquor. The selection of water source and water quality during brewing requires that the selection of water source should conform to the general conditions of industrial water, that is, the amount of water is abundant and stable, the water quality is excellent, clean and the water temperature is low. Since Baijiu belongs to beverage food, its level is very high. The water quality of brewing Baijiu should meet the standard of domestic water.

In terms of taste, it is required that the water should be clean and slightly sweet, with a fresh smell, and can not also have a strange smell. Such water quality is in line with the standard; The standard of water for alkalinity should be PH6-8 (neutral). Some friends may be unfamiliar with the alkalinity of water. Alkalinity refers to the total amount of alkaline substances in water, mainly including calcium, magnesium, ferrous, manganese, zinc and other salts in alkaline earth metals. Proper alkalinity in water can reduce the acidity of fermented grains;

In appearance, it is required to be colorless, transparent, free of suspended solids and sediment. Water with yellowish, turbid and suspended small particles must be treated before use.

The water used for brewing is still very high. When brewing Baijiu, we should strictly control the water quality, use good water quality and good brewing technology to produce high-quality liquor.
